The “recipe” for these cookies was given to me by a firend; the recipe for the glaze came from me…
These are a great, quick, chewy, cake-y cooki to make now that it is getting fall!
1 box spice cake mix
1 can (small, approx. 14 oz) pumpkin
optional: walnuts, pecans, raisins
Mix the cake mix and the pumpkin (nothing else) well. Add the nuts and/or raisins, if desired.
Spray baking spray on a piece of parchment (on a cookie sheet); drop cookies by the teaspoonfull onto the parchment. The cookies will not spread; they retain whatever shape/size you give them on the cookie sheet.
Bake at 350 degrees, for 15-20 min (depending on the size of the cookie). Let cookies cool before glazing.
Glaze: Mix 1/2 cup powdered sugar with 1 teaspoon of milk and a few drops of orange extract. If you wish you may substitute the milk for fresh squeezed orange juice (in this case omit the extract). Glaze the cookies.
Let glaze harden and enjoy!
