A couple of days ago, my friend Sana sent me a recipe for a really good chicken pot pie. I need to clarify here that I am not a big friend of chicken pot pie, mainly because I have not had a really good one.

I made some modifications based on personal taste preferences, the fact that I am watching my calories and the stuff I had at home: The original recipe calls for 1/2 cup frozen mixed vegetables. I replaced that with one cup sautéed fresh vegetables. You can use any vegetables you like (I used onions, carrots, celery, mushrooms and peas). Also, the recipe calls for 1/2 cup of grated cheese in the sauce. I left the cheese out altogether, reduced the water by 1/4 cup and increased the milk by 1/4 cup. I also increased the cornstarch by 1/2 tsp. This way, you still get a nice creamy, thick sauce but not all the cheesy calories.

I also added some extra spices (not salt, because the chicken stock/broth is salty enough) – pepper and nutmeg.

The result was a really good, chicken pot pie….
