My breakfast this morning: grilled eggplant & mozzarella

The eggplant came from my garden; they are Japanese eggplant, so they are small, long and skinny. After I picked them this morning, I rinsed them and cut the tops off.

Then, I sliced them lengthwise (approx. 1/2″ thick) and brushed them with olive oil.

I laid the slices on the grill and grilled them for 3-4 min on the first side and approx. 2 min on the other. Then, I laid slices of mozzarella on too of the eggplant and grilled about a minute or two longer. I seasoned with salt and pepper and sat down to a fabulous breakfast!
